Oh yes ladies, you heard me right! This is a chicken recipe with a sweet chocolate ending that will surely make that special guy in your life propose! And if he doesn’t, maybe he’s not the right one! L.O.L! Just kidding, for you hopeless romantics out there, here is a recipe you and your significant other will enjoy.
And if your already married, don’t worry, this recipe is kid proof, so it can easily be translated into a delicious family meal!

An Oven! I know you have one, lol. (preheat oven to 375 degrees)
2 large chicken breasts
1 bag of baby spinach (or frozen spinach well drained)
4 mushrooms (fresh)
1 clove of garlic
1/2 cup mozzarella cheese
1/2 cup water
1/2 cup heavy cream
1tsp dried or fresh parsley
salt and pepper to taste
First chop the garlic and mushrooms. Heat about 2tbs olive oil in a skillet and add garlic and let it cook for a minute before adding half of the bag of spinach. Cook spinach until soft then take off fire. Add the cheese, mix together, and set aside. Butterfly the chicken breast (split it down the middle, and lay open, like butterfly) and season front and back with salt and pepper. Divide spinach mixture and put in the middle of each piece of chicken and seal closed with toothpicks. Add about 2tsp of olive oil and 1tbs butter to a heated skillet on medium high. Sear each side of chicken until light brown and transfer to the oven for 25 minutes. After 25 minutes move chicken to a plate and add remaining butter to skillet and let melt. Add mushrooms and cook until brown. Add water, cream, parsley, salt and pepper, chicken and let simmer until it thickens. Enjoy and don’t forget to remove the tooth picks.
Serve with mashed potatoes. The sauce makes a good gravy.
Now, time for Dessert!
4 dark chocolate Hersey’s bars
1tbs unsalted butter
1 cup chilled heavy cream or whipping cream
First, melt chocolate and butter by placing in a bowl over almost boiling water. When mixture is smooth and glossy remove from heat. Separate egg and add yolks to chocolate mixture. Stir well. Beat egg whites until they hold their shape then add 1tbs sugar. Continue to beat until they form peaks. Whip cream in a chilled bowl until soft peeks form and add 1tbs sugar then continue to beat until the consistency resembles cool whip. Gently fold cream into chocolate mixture until completely mixed and repeat with egg whites. Serve in decorative glasses and place in refrigerator for an hour. Top with strawberries or whipped cream.
Add 1tsp off instant coffee to the chocolate and butter while melting.
